Lamb rump

Lamb rump is an individual muscle cut from the hind leg. When roasted and rested, it is very tender with a lot of flavour. There is a layer of fat and skin on the top which crisps up beautifully when cooked. Lamb Rump is perfect for cooking fast (pan, BBQ or oven) and serving pink. Naturally lean and flavoursome, this is a great cut for marinating; think North African flavours or keep it simple with garlic and rosemary served with a punchy green sauce.
